Grilled Buffalo Chicken Stuffed with Mozzarella

What are you to do when you get a bottle of Frank’s RedHot in the mail? You start cooking!

It’s been a while since I have posted a recipe so I thought it would be fun to play around with the sauce and try some new things!

This first recipe is a super quick and easy one that you can make out on the grill or on your George Forman. Whatever is easier.

Here’s what you’ll need:

Ingredients:

1lb Boneless Chicken Breasts
Black Pepper (to taste)
¼ Cup Mozzarella Cheese, Shredded
1 Tbsp Butter
¼ Cup Franks RedHot
¼ Tsp Celery Salt

Here’s what to do!

  • Preheat the grill to a medium heat. If you’re using a Forman… just plug it in. You got this.
  • Butterfly cut your chicken breast. Don’t panic, all this means is you need to cut into it horizontally. Don’t cut all the way through, your basically creating a nice cozy pouch for the cheese.
  • Sprinkle the inside of the chicken with pepper, to taste.
  • Add in the cheese. Honestly, don’t measure it. Just follow your heart. There’s no such thing as too much cheese. If the cats judge you, just take a drink of your beer.
  • Make sure you have a beer. Normally I’d say wine but you’re grilling chicken so play the part.
  • Melt down the butter.
  • Mix the butter with the Celery Salt and Franks RedHot.
  • Brush one side of the chicken with this concoction.
  • Place the chicken on the grill, sauced side down.
  • Brush the other side with the concoction
  • Finish your beer and get another one. No one is judging you.
  • Except the cats.
  • Ignore them
  • If you are cooking on a traditional grill, flip the chicken at about the 7 minute mark. Brush the rest of the concoction on. If you are on the Forman, baste often until you’re out of the mixture.
  • I got sick of saying concoction.
  • When the chicken is cooked through (no longer pink) serve it up!

I served this up with some green beans and a Hawaiian dinner roll.

Everything tasted fantastic! It’s always fun to add a little kick to dinner and this was just the right thing for a quick and easy summer meal!

I would also suggest a salad with some blue cheese dressing to hit with the buffalo thing we’ve got going on. If you are a blue cheese fan, it wouldn’t be a bad idea to stuff the chicken with some blue cheese crumbles rather than the mozzarella. I didn’t think of this until I was already cooking.
